Mal Bien Barranca Capon Papalote Mezcal

Aromas of char yellow peppers, citrus,  a little charcoal and dried orange peel. The palate has a soft viscosity with dried citrus and a hit of sweet pepper. D&M Tasting Notes

The papalote Javier used to produce this batch were grown in the community of Santa Catarina, about 40 minutes south of Javier’s fabrica in Ahuacuotzintla. After cutting their quiotes, the magueyero left the plants in his field for 2-3 years before finally harvesting. The result of the long “capón” time is an added level of complexity when compared with the Barrancas’ joven batches of papalote. Capon Mezcal is 70% fiber, and 30% pulp, normal is  normal is 70% pulp, 30% fiber.
