Giovi Grappa Dell'etna

The aromatic qualities of the red Nerello Mascalese grape comes through here with a lifted aromatic set of violets, spices, mixed citrus zests and a bit of clean minerality. On the palate this has a fine texture and a flavor that nicely echoes the nose. This is a project of Giovanni La Fauci, now in his mid-sixties who has made it his life's work to make excellent grappa. He did this first by building his own still at age 13! He has now been distilling professionally for almost four decades on his handmade old copper still. This is the product of grape must made up entirely of Nerello Mascalese from wineries located on Mount Etna; it comes off the still at ~70% ABV and is cut with filtered spring water to 42% ABV.
