William Saintot Blanc de Noirs Extra Brut Champagne

1er Premier Cru NV. This Grower Champagne comes from all three villages where the family has land holdings and was fermented using native yeasts in a mix of 50% Old Oak barrels, 25% Stainless Steel, and 25% Concrete Eggs. After 10 months, the base wine was married with roughly a third reserve drawn from 2015-2018. It was aged on its fine lees for 22 months before being disgorged last fall with a dosage of 3 grams per liter. While this is a blanc de noirs, we detected a delicate gold in the glass. The nose is quite a thing with aromas of cream, white raspberries, golden apple, dried cherries, hazelnuts, white flowers, blood orange, yellow plum, and oak. The palate has a presence to it moderate acidity and a flavor set of apple, blood orange, savory fall spices, and clay minerality. Immediately enjoyable, this will evolve easily through 2032.  D&M Tasting Notes
