Timotheee is located in the Montagne de Riems village of Villers Allerand; after studying winemaking in Beaune he returned and took over his uncle's vines in 2001. He works roughly 4 hectare and pretty much since he took over converted to organics in the vineyards. In the cellar he uses used oak. This is a a blend of the 2018 and 2019 vintages, and is a blend of Pinot Noir, Pinot Meunier, and Chardonnay, disgorged as a Brut Nature. The nose opens with aromas of apples, apricots, white plums, oak spice and a just there citrus coated chalk. The palate is moderate in weight with a fun mix of bois, citrus, chalk and stone fruits. This is a Champagne with shoulders so to speak, and would work well for those that enjoy the textured style offered by the likes of Krug, Bollinger or Jacquesson. D&M Tasting Notes
Meet Timothée Stroebel. Just like Charles Dufour, Raphael (Bichery), and Christian (Morgane's partner at Dandelion), Timothée studied winemaking and viticulture in Beaune ("If I hadn't gone to Beaune [instead of Avize], I wouldn't be making the wines that I make today. I wasn't confined by a set way of doing things. Everything was possible."). He graduated in 2001 and took over his uncle's vines in Villers Allerand (Premier Cru village in Montagne de Reims). Two of his professors at Beaune introduced him to organic viticulture and enology, and he was quickly convinced. He set out to convert his uncle's vineyards immediately. Today, he farms just under four hectares of Pinot Meunier, Pinot Noir, and Chardonnay here planted over three parcels. Importer Notes
