Pinhook Bourbon Heist Straight High Proof Bourbon Whiskey

The nose shows funnel cake, clarified butter, cinnamon hard candy, and rye bread with water. The palate is grain and sugar dominant with flavors of banana’s foster, allspice, spun sugar, and bruised apples.  D&M Tasting Notes

Pinhook and their 2021 Crop Bourbon Heist 119.9 proof. Theirs is an operation from name to execution that has followed the sourcing and outsourcing model. The term Pinhook is related to buying yearling horses and then breaking and training them to in turn sell them when the said horse becomes a race-ready two year old. Beginning in 2010 their barrels were sourced from LDI/MGP, but starting in 2017 they entered into quite the unique relationship with the Old Taylor Distillery, now named Castle & Key. Pinhook directs Castle & Key as to the recipe to use in distillation as well as stores the resulting whiskey at C&K before blending it to their founder’s taste in yearly ‘crops’ of proofed down and cask strength releases. This year’s crop piqued our interest as the Bourbon Heist is just shy of three and a half years and is a great look at what Castle & Key has been up to; it is not the first release but additional maturation has helped tighten the flavors.
