The main man behind Petite Clergeot is Paul-Bastien Clergeot. His family has been growers in Champagne for generations, and they are located in the small, sleepy village of Polisot, home to 341. His father’s generation mostly sold off the harvest under long term contracts to the big houses, and farmed in a conventional manner. After spending his early twenties studying and working in Burgundy as well as alongside his mentor in Polisot, Rolland Piollot, Paul launched his standalone winery in 2018.
