The blend of the Demi-Sec champagne is identical to that of the Brut Réserve (Pinot Noir, Chardonnay and Pinot Meunier), however, the dosage is greater. Its pale gold color is beautiful, emitting fine, regular and persistent bubbles in the flute. Its nose is lively with a hint of delicate white flowers and evolves towards aromas of buttered brioche. This champagne is both a full-flavored expression and a reference for its perfect balance between sugar, alcohol and acidity. Champagne House Notes
The Billecart family has been living in Mareuil-sur-Ay since the 16th century. When Nicolas Fancois Billecart married Elisabeth Salmon in the early 1800s, the two families’ long-held vineyards were combined. Nicolas decided to leave his law practice and take over the family estates. In 1818 he founded the house of Billecart-Salmon, which is now the oldest continuously family-owned and operated house in Champagne.
A unique characteristic of Billecart-Salmon is their practice of double cold settling, which they began in 1952. This process preserves and protects the delicacy of the grapes, as well as highlighting the complex fruit aromas of each varietal. In 2001 Billecart-Salmon moved their winemaking into a brand new facility designed to be the most technically advanced in Champagne.
