Sourced entirely from Cask number #806214. The nose opens with fried dough towards funnel cake, ripe pears, quince, and tangerine flesh. The palate has a lovely richness from the cask strength 57.8% but does not come though as hot with flavors of sweet fresh dough, tree fruits, and a light lift of tangerine oil. Enjoy! Auchroisk, being a distillery of the modern era, never had any floor maltings; all of the malted barley used at the distillery is delivered unpeated. After a rapid mashing and a relatively quick fermentation of 75 hours, the wash (distiller’s beer) is passed into one of four wash stills, which have a capacity of 13,500 liters a piece. From there, the resulting low wines are transferred into one of the four spirits stills, each with a capacity of 9,000 liters. The distillery is unique versus most other distilleries that we write to you about in that the rapid boiling of the stills produces an almost singed/burned character that comes across with time in barrel as a nutty/spicy aroma and flavor set. Through the year, this process leads to an output of 3.1 million liters. To say that most of this is destined for blends is a massive understatement. Over 90% is destined for blends and brings a nutty character to the J&B and Johnnie Walker Red blends. The vast majority of the whisky is aged on site; Auchroisk is also a warehousing site for most of Diageo’s output in the region. Michael Kennel, D&M
