Allouchery Bailly Diapason Brut Champagne

Premier Cru. The nose opens with lemon, apple skins, crushed rocks, ginger, and a steely edge. The palate is moderate in weight with ginger and spice notes that give way to lemon, apple, and a zippy minerality to finish. Made up of 37% Pinot Noir, 24% Chardonnay, and 39% Pinot Meunier, all vinified in stainless steel tanks. The vast majority of it comes from the 2018 vintage with thirty percent being from previous harvests. It was disgorged with a dosage of 7.3 grams per liter. D&M Tasting Notes
