Krater Cellars 2017 Monterey Chenin Blanc

The Krater Chenin Blanc a quite lovely expression of Chenin Blanc from the cool Monterey Bay area. To quote from the winery. To quote from the producer: this is the product of two tones harvested on September 2nd 2017 from a site with 20 year old vines, the forth year they worked with this vineyard at 300 feet above sea level. It was planted on Oceano loamy sand, and the vineyard is notable for its proximity to the cold deep water canon of Monterey Bay. It was whole cluster pressed and fermented in neutral oak barrels on its lees for 10 months. The primary fermentation was slow and wild and the malolactic fermentation was spontaneous and complete. Bottled with minimal SO2, this could be called 'Natural" by a most adherents to the movement. It has a PH of 3.08, a residual sugar count of less than .1 grams per liter, and a total acidity of a zippy 8.5 grams per liter. https://dandm.com/krater-cellars-2017-monterey-chenin-blanc.html


Chartogne-Taillet 2015 Les Couarres Champagne

Chartogne Taillet is a grower Champagne producer in Merfy, in the northern arc of the Montaigne de Reims. The 2015 under review is the last year in its current iteration as it was replanted after this harvest. The vineyard is entirely Pinot Noir and was farmed without the use of herbicides. In the cellar fermentation happened naturally with wild yeasts in oak barrels. The bottle under review was put into bottle in July 2016 in contact with its lees and disgorged in June of 2020 with a dosage of around 6 grams per liter. Folk Machine 2019 Parts & Labor Red Wine

A Carignan dominant 'Cote du Rhone of California. This year's iteration is one of our favorites over the last few. The nose shows pretty strawberry, bing cherry and minerals. Forest Marie 2008 Premier Cru Brut Champagne

In many simple ways the best things are worth waiting for. The families that came together to form the modern Forest-Marie can trace their lineage back nine generations to a deed from 1746 when the Forest family joined the landowning class. Over the intervening generations, little by little, the family kept buying land. For this generation, when Thierry Forest married Gracianne Marie, they combined their land holdings into 86 plots across the villages of Trigny (formerly his) and Ecueil (formerly hers.) Their vines are planted to roughly a third of each of the most common Champagne varietals: Chardonnay, Pinot Noir, and Pinot Meunier. Boring to say, but Gracianne and Thierry are dedicated mulchers. They have spread mulch over their vineyards to promote biodiversity and lower the rate of tilling for over 35 years. They have a total annual production of 6,700 cases. The bottle we have featured, the Forest-Marie Vintage 2008 is made up of a 50/50 blend of Pinot Noir and Chardonnay. The level of specificity that we can say about this wine gives us a chance to geek out-- this comes entirely from two south facing parcels Chaillots & Mont des Chrétiens planted on calcareous soils that have an average vine age of 67-80 years. The grapes were hand harvested and fermented in stainless steel for 20-30 days with spontaneous and cultured yeasts; malolactic was allowed to happen. After fermentation was finished, the wine was aged for 8 months with 29 mg/L of sulfur before being bottled under crown cap on March 23, 2009. The bottle highlighted here was disgorged in January 2020 and finished with a dosage of around 6 grams per liter and a total alcohol of 12.15% ABV. https://dandm.com/forest-marie-2008-premier-cru-but-champagne.html

Traverse City Whiskey Store Pick Straight Bourbon

Here Michael at D&M reviews the 2020 iteration of our Traverse City Cask Strength Bourbon. To get nerdy with it, it is barrel we #21-P276, and is a four year old from MGP distilled January 4, 2016. Its mash bill (recipe) is of 75% Corn, 21% Rye, and 4% Malted Barley. It was a full 53 gallon barrel, coopered at Kelvin with a #4 char and a medium toast. It was aged by Traverse City on Level 3 with a rack location of C6. It was dumped out of the barrel on February 6, 2020.
