Gomez Nevado Sierra Morena Dorado Amontillado Sherry

In the style of Amontillado this is 30% Pedro Ximenez and 30% Palomino fino with 40% Airen. Fermented in an amphora then aged for five years under a flor then a further 10 years exposed to oxygen. The nose opens with some sea spray, oak, nuts and a mix of baking spices. The palate is textured and dry with a mix of nuts, sea spray, a bit of oak and a lingering acidity minerality.
