Clos Cibonne Cuvee Speciale Tibouren Rouge 2023

If you have never had the chance to try a Red Wine from Provence featuring the rare Tibouren grape here is your chance. This is composed of 90% organically farmed Tibouren with the small addition of 10% Grenache. It was fermented with native yeasts in Stainless Steal and rested for a short six months in quite large oak barrels. The nose is quite the beguiling thing with complex aromas of white cherry, boysenberry, mixed spices, thyme and herbs de provence, and a light clay note. On the palate this is lively with flavors of delicate red fruits, violets, clay, and a mixed spice tone. This could very much work with a slight chill and would be a great pairing match for fish and up to moderate Vegetarian fare.  D&M Tasting Notes
