Baldoria Vermouth Bitter (Bianco) 750ml
Built around a base of Chardonnay, which is scarcely planted in Piedmont, this production from Cuneo emphasizes a bianco-style vermouth with additional gentian, ginger, and bitter orange, as well as yerba mate. This vermouth hybrid leads with the ginger, orange, and chamomile for a refreshing and inviting bouquet before leaning into a bracing bitterness where the mate really takes center stage. Functionally, this acts almost like a halfway point between vermouth and its cousins like quinquina or Americano, and is fantastic served with ice and a slice; or worked into a martini or white negroni. Semi-Dry, Bitter White Vermouth on a base of Piedmontese Chardonnay wine. Botanicals are grown in-house and/or sourced from a nature preserve in the Maritime Alps. Selected botanicals are macerated in a hydro-alcoholic solution (grain neutral spirit and water) for 10 days. Following the hydro-alcoholic bath, the botanicals are macerated in wine for 10 days. The finished macerations are then blended with natural sugars that have been diluted in wine, followed by aging in stainless steel tanks. Lightly filtered before bottling. No added flavors, no colorants, no clarifying agents, no preservatives. Some natural sedimentation is common across varieties.
