Batch 011 is crafted from six corn components, two rye elements, and a new wood cask of Peregrine First Flight.

Flavor Notes

The aroma is rich with baking spices, sweet wood phenols, and creamy herbal undertones. Batch 011 evokes the essence of an ancient forest, blending notes of pinewood and vanilla beans. As the experience unfolds, distinct impressions of honeycomb, charred tree sap, and lychee tea emerge.

On the palate, Batch 011 arrives with a thick, caramel-like texture, reminiscent of chocolate lava cake. Warmth builds alongside emerging cinnamon and nutmeg flavors. The mid-palate softens into creamy, burnt marshmallow phenolics, complemented by savory mint tea sweetened with melting rock candy. Resonant clove and graham cracker notes develop into the finish, culminating in a brandied cherry dipped in molasses that lingers and crystallizes on the back of the tongue.
