The nose displays fruit intensity and an aromatic set of spices, sultana raisins, orange peel, and bread pudding. On the palate, the additional time in barrel shows flavors of barrel spice, bread pudding, dried stone fruits, and the lightest suggestion of a rancio/forest floor note to finish. OVERVIEW: “When distilling the 1999 harvest, in the first months of 2000, we had the feeling that this vintage expressed aromas of particular intensity. We therefore wanted it to age separately, in a dedicated cellar in Bouteville: the Villeneuve Haut cellar. This long maturation in oak barrels slowly made it follow the characteristic stages dear to our way of making Grande Champagne. Today it is the bridge between the flowers of the Napoleon and the fruits of the Vieille Réserve – XO. The aromas become more intense, rounder, fruitier; proof that long aging reveals all the depth of our Bouteville eaux-de-vie. This is a gourmet cognac with plenty of freshness on the palate.”
ABOUT US: "From Pierre Giraud in 1635 to Paul Giraud today, eleven generations have succeeded one another at Bouteville. These almost four centuries have nurtured a strong attachment to our village and its life. Over those years, each generation worked the vines and produced cognacs sold to merchants in Jarnac and Cognac. In 1975, Paul and his son Paul-Jean decided to embark on the adventure of independent marketing. Their aim was to make it possible to taste, without blending, the old and rare cognacs with the subtle and characteristic Grande Champagne aromas that form the treasures of the family’s cellars. The estate now covers 50 hectares, all planted with ugni-blanc grapes. Assisted by a team that also spans several generations, Paul-Jean and Paul work to perpetuate their ancestral know-how."
