Rezpiral Simeon Ramirez Tobasiche and San Martinero

Rezpiral San Martinero is crafted by Simeon Ramirez in the community of San Agustin Amatengo, Oaxaca. This destilado de agave undergoes a meticulous process: the agave is first cooked in a conical earthen oven, then milled using both a machete and a mechanical mill. Following fermentation in cypress vats, it is distilled once in a refrescadera still, with a final refinement in a clay pot.
