Straight Bourbon Whiskey Aromas of nougat, tobinado sugar with orange peel and peanut skin. The palate has grilled peach, sweet wheat mingled with honeyd cornbread and black pepper. D&M Tasting Notes
The story of Wyoming Whiskey begins with one of the most prominent ranching families in Wyoming, the Meads. The Mead family business for much of the last 125 odd years has been raising and selling cattle in Kirby and Spring Gulch, Wyoming. In the early 2000s, the current heads of the family, Brad and Kate, purchased some land for winter grazing of their cattle on the banks of the Bighorn River. It was then and there that they had something of a eureka moment. The craft whiskey movement was just beginning to take shape, and they realized they had everything they needed to make whiskey on their new plot of land. They took on a family friend, David Defazio (a journeyman with a law degree) as a founding partner and went about building the distillery from the ground up. With the instruction and deep knowledge of Steve Nally (Maker’s Mark alum with 30 years under his belt) the distillery and concept came into focus. Above you can see their pride and joy, a custom 38-foot still from Vendome Copper & Brass Works.
The Meads and David were focused on a sense of place for their whiskey, a fact highlighted by where they get their raw ingredients. The grains for their whiskey are sourced from within 100 miles of the distillery and the water for all operations is drawn from the mile deep limestone aquifer that sits below the distillery. Today Brad and Kate’s son Sam Mead is the head distiller Michael Kennel, D&M
