Serge Mathieu is located in the village of Avirey-Lingey in the Aube (oh’b) district about 45 minutes from Chablis. Given its proximity to Chablis you would think chardonnay but this is Pinot territory, with about 85% of this area is planted with pinot noir. The Mathieu’s have lived in this area since 1760. Plot by plot they have built a vineyard that now covers thirty acres. For seven generations the family sold their grapes to the big houses such as Billecart-Salmon but in 1972 Serge began bottling under his own label.
After Serge retired, his son-in-law, Michael Jacob, took over wine growing and wine making duties. Serge’s daughter Isabelle is in charge of the commercial side of the business. While the vineyards are not organically grown, Michael takes a holistic and ecological approach. He has divided the estate into plots which all receive individual treatment. The techniques used respect the soil and their natural balance. This benefit is duly transmitted to the vines and the grapes, ensuring that the raw material for their champagne is both healthy and ripe.
