This "Grower Champagne" has a nose that is crisp, clean and focused citrus, cream and light minerality. The body is medium along with the acidity. On the palate everything is in place with a light cream, mineral, and general citrus set. This a cuvee of 60% Pinot Noir and 40% Chardonnay and has a dosage of 8gpl D&M Tasting Notes
While the vineyards are not organically grown, Michel severely restricts the amount of unnatural products on his vines and soil. Recently the negoçiant Billecart-Salmon has been buying pinot noir from Serge Mathieu, recognizing the excellence of Michel's raw material.
The Mathieu family has lived in Avirey-Lingey since at least the 18th century. In 1760, then again in 1860 and 1894, notarized deeds show that plots within the commune of Avirey-Lingey were acquired by the Mathieus.
Several others were to follow during the next century, despite troubled economic times. Plot by plot, they have built up a vineyard that now covers 11 hectares (about 28 acres). Seven generations of vine-growers have managed the property, at first selling their grapes to négociant houses.
