Petit & Bajan Ambrosie Brut Champagne

The Ambroise is entirely made up of 2012 is a blend of 70% Chardonnay from Avize and 30% Pinot Noir from Verzenay. For this bottling only the first press is used. The wine is fermented in stainless steel and malolactic conversion is allowed. It was aged on its lees for over sixty months and finished with a dosage of 3 grams per liter. As a final fun fact, the sugar that is added at disgorgement is made by Richard who uses the wine from the disgorged bottles and cane sugar. Waste not, want not. The nose shows aromas of golden apple, cream, apricot, lemon marmalade, sugar cookie, grapefruit, hazelnut, jasmine, and a bit of chalky minerality. The palate is moderate in weight with precise golden apple, lemon oil, apricot and nectarine flavors and a zingy minerality to finish. Drink this now or over the next five to seven years. As the name suggests, this is a joining of two families under one banner. Richard Petit comes from the Grand Cru village of Avize and runs the Petit Le Brun family business. Richard Petit’s family can trace their lineage four generations to the then head winemaker of Perrier Jouet who at his death divided 60 acres of vines amongst his 9 children. Véronique Bajan’s grandfather Stanislas Bajan emigrated from Poland before the start of World War II to work at Champagne Lanson. In addition to his duties at the house, he began purchasing land in the Grand Cru village of Verzenay. His son (Véronique’s father) also began working for Lanson at the tender age of 14, and after his marriage purchased an estate with 70 acres in Verzenay. All that exposition to say that past generations have set the stage that Richard and Véronique now work on. The couple met and married in the late 1990s, and for the first decade focused on Richard’s work for the family domain in Avize. The desire to do something together that was their own continued to come up in conversation, and by 2009 they decided to set aside some fruit from their ancestral holdings to release under their own banner.

Similar to Pierre Moncuit all of their bottlings are of a single vintage: though at this point in time for practical reasons versus philosophical. As Véronique explained by email: “We created this brand in 2009 with a first bottling in 2010. As we had no reserve wines, we chose to make only vintages. [We started with two cuvees] about 3500 bottles of each cuvée, and we didn't know if we would sell many or not. As we sold out quickly and released the next vintage early, any notion of vintage was meaningless. So we decided not to write the vintage on the label and we continued in this way for the following vintages.”

Today Richard handles the winegrowning and cellar work while Véronique works on blending and marketing. Theirs is a relationship of equals, each with their own important role to play. In the fields, Richard is dedicated to the concept of ripe fruit. In their home village of Avize, the last two growers to pick are Richard Petit and Anselme Selosse. Michael Kennel, D&M
