The dosage on this "Grower Champagne"  Premier Cru Brut NV is at 10 grams per liter. The nose shows a classic aroma set of toast, baked apples, some cream, and a light stone fruit note. The palate is medium bodied with moderate acid and a flavor set of toast, yeast, stone fruits, and a dusting of minerals and clay. Try this with slow-roasted beef tenderloin. D&M Tasting Notes

The Lallements have been in the village of Chamery for four generations, as evidenced by the number of growers that share that name. The Lallement’s 17 acre holdings are spread across Pinot Noir and Pinot Meunier holdings in Chamery, and Chardonnay planted sites in the nearby villages of Eceuil and Sermier. Chamery’s terroir is marked by clay soil on top with chalk layers underneath. The village of Sermiers has soil of mostly clay while the village of Ecueil mainly has sandy soil. Pascal Lallement farms his vineyards organically, and, like Doyard 40 km to the south, ages his wines for extra-long periods of lees aging before disgorgement and release. This bottle is made up of 40% Pinot Meunier, 40% Pinot Noir, and 20% Chardonnay, from the 2012, 2011, and 2010 vintages; aged for just shy of 60 months on its lees. Michael Kennel, D&M Winebuyer
