• Michel Dervin Blanc De Noirs Brut Champagne

From a tiny village of Cuchery, Michel Dervin got his start less than 40 years ago in 1983. He started with only one acre of land in the village, but has steadily grown to 11 acres over the decades, with vine ages ranging from 5 years to 50 years old. He is a Pinot specialist with the majority of his holdings being Pinot Meunier. Information is a bit scant- Michel is of the old school, more interested in living life and making Champagne rather than working the levers of commerce and social media. We can say that the cuvee we have for you, Michel Dervin Brut NV, is made up of 80% Pinot Meunier and 20% Pinot Noir and is aged on its lees for around three years before being finished with a dosage of 12 grams per liter. This is a cuvee that shows the character of Pinot Meunier with aromas of marzipan, toasted hazelnuts, white cherry, and a high toned citrus note. The palate has a softness from the dosage and a flavor set of yellow fleshed fruits, nuts, honey, and a mix of citrus zests. For a fresh and clean flavor set try this with a Cucumber Salad .
