The nose of this cask strength Macduff is quite complex and pretty with aromas of white flowers, heather, honey, baked cookies, sea salt, apricot flesh, cocoa nib, and candied orange peels. Macduff is one of only two distilleries in Scotland that has a total of five stills: two wash stills and three spirit stills. The other distillery that has this same anachronistic setup is a storied name in Scotch: Talisker, on the Isle of Skye. The wash stills each have a capacity of 20,000 liters and the spirit stills have a capacity of 12,500 liters. All the stills have a traditional Speyside shape, with wide spherical lids and tall, conical necks. In the modern day the distillery has a production capacity of 2.4 million liters, and draws it water from the Gelly burn, which is adjacent to the distillery’s site. The maltings are done by Bairds in the Speyside and are generally unpeated for the blends and occasionally very lightly peated for the single malts. Only 10% of the annual production is destined for single malt status, the vast majority is utilized by Dewar’s for their blends
