• Louis Nicaise Brut Reserve Champagne

Premier Cru. Grower Champagne. This bottle we have for you is their Louis Nicaise 1er Cru Brut Reserve MV, it is made up of 40% Chardonnay and 30% Pinot Noir and 30% Pinot Meunier from the 2009, 2010, and 2011 harvests. It was aged for a little over 5 years on its lees and finished with a dosage of 8 grams per liter. The nose shows a fun mix of tart apple, tropical fruits, some cream and a light nut note. The palate has a zingy acid base that leads to tart stone fruits, citrus and the slightest hint of nuttiness. Try this with a fancy seven layer salad with endive and yogurt. D&M Tasting Notes

North and the village where the origin story of Champagne begins. The town of Hautvilliers (just north of Epernay) marks its beginnings in the seventh century when an abbey was erected on the hillside above the town. Fast forward a millennia and a certain monk by the name of Dom Perignon was posted at that same abbey. While the apocryphal origin story “come quickly, I am tasting the stars” does sell bottles, it most certainly was not said by a certain Dom Perignon. The Nicaise family have been making Champagne for 4 generations from their 22 acres in Hautvilliers. The current generation is led by Laure Nicaise-Préaux and her husband, Clémént Préaux. Clémént apprenticed at Anselme Selosse and worked at the co-op of Mailly before becoming part of the Louis Nicaise family. As his father-in-law has given him more control, Clémént has reduced the dosages on the wines and focused on quality in the vineyard and the cellar. Michael Kennel, D&M
