“Rich bold flavours with a breadth, depth and balance of character that sets it apart, the 2021 edition is packed with juicy fruit, macerated lemon and sweet char grilled BBQ smoke,” Anthony Wills, Kilchoman Founder and Master Distiller.

This, the 2021 edition, is a vatting of 24 oloroso sherry butts filled in 2011 and 2012. These large 500 litre sherry butts have been sourced from Bodega Miguel Martin in Spain and filled with Kilchoman spirit peated to 50ppm. Once these casks had been matured for a minimum of 9 years, they were then vatted together and bottled at 46% abv, resulting in 17,000 bottles being made available to Kilchoman fans around the world.

From a overarching philosophy, Kilchoman emerged out of the same school of thought as the American ‘Grain to Glass’ movement. They too were interested in starting with raw ingredients and working through to a finished product. Anthony Wills began in the whisky industry running his own independent bottling company for eight years, and saw the resurgence of Single Malts in the marketplace. He and his family decided to bring whisky back to its roots with farm distilling. ‘From Barley to bottling,’ is the slogan that the Kilchoman Distillery chose to represent their business philosophy. This reason to be included being located on the farm that grew the grain that made the whisky. It helped, to be sure, that Anthony’s wife’s family has owned land on Islay for over 60 years. With the combination of place, access to great barley, water from the hills of Islay, peat, and four sons to do the grunt work; Kilchoman was established within the bounds of Rockside Farm in 2005 This was a decided gamble as Kilchoman was the first new distillery started on Islay in 97 years.

Commiserate with their aim to be self sufficient, Kilchoman still engages in floor malting of the barley, though occasionally they have taken in some grain from the Port Ellen malt facility. The peat level that the distillery aims for is around 50 parts per million. Kilchoman remains a small operation and currently runs two stills, which produce around 100,000 liters per year. (This makes them simply tiny in the world of Scotch whiskey were their neighbors Lagavulin and Caol Ila produce 2.5 and 6.5 million liters respectively.) The bottling that we have for you this month is made up entirely of whisky aged in sherry butts from the Bodega Jose Miguel Martin. The 2018 Loch Gorm release is a vatting of 19 barrels that were distilled in 2007, 2008, and 2011. No filtration is done and no caramel coloring is added. When we tasted this bottling in the late summer, we knew that we wanted to offer this to you, albeit when the weather turned cooler and more hospitable to Islay whisky
