Gail 2021 Sonoma Valley Chenin Blanc

Two Creeks Farm. If there was one word to describe this wine it would be tension.  Begging for two words, tension & acid come to mind. The nose shows a honeysuckle up front with citrus peels, lemon oils, nectarine and a light savory pine note. The palate is just shy of moderate in weight with zippy acid and a flavor set of nectarine, lemon, and honey balanced by pine notes. D&M Tasting Notes

Pressed straight to barrel, we fermented the entire lot in neutral 600 liter puncheons using nothing but ambient yeasts. Our approach with white wine has always been to pick at a moderate sugar level, press straight to barrel and age the wine on its lees until it's ready to bottle. This allows us to keep energetic acidity balanced with weight and texture. (12.3%)
