This quarter century plus year old shows a deep amber in the glass. The nose is full of aromas of leather, quince, oak, dried apricot, and forest floor. The palate is softer with turned earth and forest floor up front that gives way to apricot preserves, quince paste, oak, and warm mulling spices. D&M Tasting Notes

To reach this Domaine from the town of Cognac, first you would set out on the D24 heading north-northeast. After a pleasant 20 minute drive, you will arrive in the small town of Macqueville which is situated around a central Church. There, the street names reflect the day to day nature of its rhythms: there is the school road, the forge road, and the valley road. On the valley road is the property that has been home to three generations of the Février family. From its basket handle main archway to its enclosed central courtyard, this very much looks and acts the part of a working 18th century Charentaise vineyard and winery. Today, this is the home of Laurence and his wife Emmanuel Février. They are in their fifties and run all aspects of the operation from vineyard to direct sales. Their full line of products includes everything from verjus (fancy word for grape juice), still wine, Pineaux des Charentes, and of course Cognac. They are part of the Independent Vigneron association and quite proud to be listed in the latest iteration of the guidebook Hachette des Vins.

The Fevrier house and estate are located in the Fins Bois appellation of Cognac. As a quick reminder the Fins Bois is the largest cru in Cognac by surface area, and completely surrounds the central trio of crus. The Domaine boasts 47 acres of vines. In addition to the Ugni Blanc they have planted for Cognac, they also have Colombard, Merlot, and Cabernet Sauvignon planted for their still wines and Pineau. These are atop a combination of "Pays haut" (red clay-limestone on draining subsoil) and "Pays bas" (red clay- limestone on deep soils) all mixed with and topped by stones. Laurence and Emmanuel have stated that with a perennial plant like vines, maintaining biodiversity and soil life is essential. As such they utilize organic fertilizer and plant a mixed cover crop between the rows of vines. While they do use chemicals to fight powdery mildew, they use a device with confining panels that surrounds the grapes and leaves in an attempt to limit overspray.

After harvest, the juice destined for Cognac is quickly pressed and, after yeast is added, fermentation generally takes a week, resulting in a wine around 8% alcohol. No sulfur is added to wines destined for distillation. From there we are off to the stills. At Février the wines are double distilled with their lees for added complexity. The first distillation-- the brouilli-- raises the alcohol percentage to around 30%. The second distillation-- la bonne chauf e ‘the good heating’-- raises the resulting Cognac to around 70%. From there the distillate matures in new oak barrels for a number of months before being transferred into old oak barrels to complete the long marathon to maturity. This is the Février Reserve Familiale. This term is only used for the US market, and it is made up of Cognac that is at least 25 years old.
