Du Peyrat Rare Prestige Organic Cognac

This blend of Fin Bois and Petite Champagne is seven to nine years old, and here you can really see the effect of Du Peyrat’s “fatty distillation” method: a roundness that’s different than the Sélection. Brilliant copper-penny-colored, with aromas of prune, brown sugar, nutmeg, licorice and crème brûlée, though plenty of pretty dried rose aromas mingle with the dessert notes. The sweet elements linger on the palate, which is dense and unctuous; attractive cedar and rich tobacco at midpalate carry through the finish. In the 1990’s Jean-Francois was a pioneer for organic wine growing in the Cognac region, so turned his focus to the production of Organic Cognacs.
