62.25% ABV. This is a cask strength bottling of the Dry Fly Bourbon . The mashbill on this is 60% corn (grown by the local Hutterian Settlement), 20% wheat, and 20% barley. Listed internally as barrel number 40, it was aged in 53-gallon barrels with a level 3 char for 4 years. The nose shows fresh grain, leather, salted caramel, tropical fruits, and just there pepper. The palate has a great texture with a rounded mouthfeel and shows an initial hit of pepper (almost Szechuan peppercorns) with salted caramel and pineapple. D&M Tasting Notes
The kernel that would become the distillery began during a fly fishing trip, when two buddies tired of the corporate rat race bantered around the idea of trying this new ‘craft distilling thing.’ Kent Fleischmann and Don Poffenroth were those two friends and both had a background in the industrial food business. Being savvy to the ways of scale and how large business worked, they decided to take a different path for their next life chapter. They leaned on Kris Arvid Berglund PhD, a Michigan State Professor of Craft Distilling in East Lansing, Michigan for distilling knowledge; and for distillery layout contracted a family firm in Germany that has been building distilleries since the late 1800s.
Not wanting to be beholden to outside investors they borrowed from themselves, or rather their retirement accounts. (This did cause Don’s wife to ask if he was high when he first proposed this.) They were innovators in the craft distilling space with ‘bottling parties’ and a distilling school. Oola, Big Bottom, Smooth Ambler, Green Hat, and dozen of other distilleries have passed through the school over the years. They source the grain from Eastern Washington state, where they are located.
