All of their Armagnacs are produced exclusively from their own vines of Baco and Ugni Blanc. All Armagnacs are exclusively produced with wines harvested, vinified and distilled at the Château de Millet. They are raised in oak barrels until they are bottled on the date mentioned on the label.
It starts with agriculture. Château de Millet has been dedicated to their vineyards for 5 generations, and the Dèche family took over the vineyard and distillation fully in 1973. The grapes are grown on 220 acres of their High Environmental Value certified farm in the heart of the Bas Armagnac region. All their armagnacs are produced exclusively from this single vineyard, where just 25 acres are devoted to their Baco and Ugni Blanc grapes. The vines enjoy a north westerly position on the green hills where the soil alternates between clay limestone and the sandy soils known as the famed 'sables fauves'. Laurence Dèche, who took over production from her father in 2002, oversees the press, the long fermentation process, and distillation; a process that starts during grape harvest in November and lasts several weeks until the distillate is laid to rest in casks made from local French oak.
