*375 ML. Grower Champagne The bottle is made up of 90% Pinot Noir and 10% Chardonnay from the challenging 2011 and 2010 vintages. The wine itself was fermented in old oak barrels with weekly batonnage and allowed to partially go through malolactic conversion before being aged on its lees for 24 months in bottle. This was disgorged back in 2014 with a dosage of 10 grams/liter. The nose shows a cream, rustic cracker, green apple, light citrus, and mirabelle plum. A grower from the far South in the Côte des Bar, Bernard Gaucher and their Brut NV. We have seen an distinct uptick in interest in the wines hailing from this area, and it is easy to see why. As the Aube is located far to the south of Champagne, it has a generosity of fruit that is less present in wines from the Northern Districts. Gaucher is no different. Bernard is active in the day to day operation of the vineyard, along with four full time employees and up to 80 during their hand-picked harvest. Today, Bernard’s son Guillaume is in charge of the cellar and is taking on a increasingly large role in the estate.
