The nose shows soy, maple leaf, cinnamon, baking spice, forest floor, and golden raisins. The palate does have some sweetness but it is primarily balanced by spices and a distinct earth note. D&M Tasting Notes
After years of aging in Trinidad, these rums finish their aging in Gascony in small 220 liter barrels which have previously aged Sauternes, but also in old 500 liter barrels of Fino, Oloroso, and Manzanilla. A rum for those looking towards the savory as opposed to the sweet. This one shows its place quite well with aromas of soy, cinnamon, forest floor, maple leaf, and golden raisin. The palate echoes the nose with more savory / leaf characteristics with some wood spice.
Angostura was originally a medicinal tonic, invented by Dr Siegert, a German doctor who came to Vénézuela to help Simon Bolivar during the struggle for independence. This liqueur was named after the Venezuelan port of Angostura (now known as Ciudad Bolivar). Political instability forced the company to leave Venezula for Trinidad. However, the success of Angostura bitters is still going strong and is an essential ingredient for every self-respecting barman. At the beginning of the 20th century, the Angostura company moved into the rum business.The rum that Marc Darroze has selected is natural and unsweetened. After several years spent ageing in Trinidad, this finished its ageing in Gascony, in small 220 litre vats (previously used for ageing Sauternes) but also in old 550L vats, previously used for ageing Fino, Oloroso and Manzanilla.
