Disgorged September 2014. Fresh baked bread, some dough yeast and spice that shows the addition of a 20 year solera. This 80% Black grape cuvee has a classic yeast element here that is kept in check by a finish of a red fruit edge. Classic, traditional and lovely. D&M Tasting Notes
The N.V. Brut is 55% 2010 and 45% reserve wine, with 55% of the reserve coming from a solera containing all vintages from 1998 to 2009. The blend is 45% Pinot Meunier, 25% Pinot Noir, 25% Chardonnay, and 5% of the ancient varieties Arbanne, Petit Meslier, and Fromenteau.

In addition, the malolactic is always encouraged, as the Aubrys feel that acidity is never lacking in the wines, and they would prefer to have slightly lower acidities and be able to use a very low dosage than have high acidities and be forced to dose the wines more" - Peter Liem, Importer Notes
RM or récoltant-manipulant. Driven by passion for their product, these producers bottle and sell their wines under their own labels. There is a potential for high quality combined with good value, and wines that might reflect the terroir of small plots of land rather than standardised blends. R stands for Récoltant ( the literal translation is "Harvester") M stands for Manipulant ( literally "Handler") These "grower" champagnes account for just under 3 percent of the total market.
