St. George Spirits Absinthe Verte is made with fine brandy, star anise, mint, wormwood, lemon balm, hyssop, meadowsweet, basil, fennel, tarragon and stinging nettles. To make St. George Absinthe Verte, we begin with the traditional components of this storied spirit: the unholy trinity of wormwood, star anise, and fennel. We then infuse an array of carefully selected herbs and botanicals in fine brandy to create a spectacularly deep flavor profile and tongue-tingling lushness—with nothing artificial, ever.
We bottle this beguiling creation at 120 proof to keep the botanicals in solution. Sipped neat, it’s a heady, herbaceous smack to the senses. To bring out another level of vivid flavors and a lovely louche (milky cloudiness) that seems to glow from within, a single, large ice cube is ideal. Adding water further releases botanical oils into solution, deepening the louche and intensifying the heady, floral aroma.
St. George Absinthe Verte adds complexity to Sazeracs and mixes well in any other cocktail that calls for an anise spirit. We developed our formulation over years of patient experimentation and think it’s pretty much perfect just as it is. We don’t advocate adding sugar to our absinthe—or to any other artisanally distilled absinthe for that matter.
