The complexity of Charbay S Whiskey is considerably powerful. You can peel back so many layers from the aroma alone: honeyed bran, toasted oats, golden raisins, mint, thyme, lemon verbena, bay leaf, hops and jasmine. After passing through this impressive array, the palate opens up to chocolate malt, crystallized ginger, pilsner beer, coffee, bourbon vanilla, tangerines, and more mint, all of which dries to a finish of oak, bran and young rum. Our wait finally ends—the S (Stout) Aged Whiskey from Charbay is here! Hard at work, Marko K. distilled an incredibly unique whiskey from his favorite beer, Big Bear Black Stout, from Bear Republic Brewery.
For Charbay and the Karakasevic family, their personal history of fermenting and distilling traces back over three-hundred years. Though the modern era started in old Yugoslavia with Miles Karakasevic in 1954 when he began distilling, the family practice made its way across the Atlantic in 1962, eventually establishing itself in Ukiah. The next fifty-plus years brought many achievements and milestones:
1959 – Miles Karakasevic becomes the 12th generation to earn the title of master distiller.
1962 – Miles receives his degree in Enology and Viticulture and moves first to Quebec then on to Michigan in 1968 for wine making.
1983 – The Karakasevic family begins distilling and making wine in Ukiah
1986 – An alembic Pot Still is purchased and the family begins distilling brandy
1993 – Miles—now joined by his son Marko—builds a new winery and distillery next to their home on Spring Mountain.
1995 – Marko joins Charbay full time and begins to promote the family’s products.
2009 – Marko becomes a Master Distiller with his release of the Doubled & Twisted light whiskey.
2012, June 28th at 4:47 – Our single barrel of Charbay S whiskey is delivered to D&M by Marko just hours after he bottled it. We are proud to say we were the first to get any of this wonderful product and also take part in the Karakasevic family’s incredible distilling history.
As stated above, Charbay S is distilled from Big Bear Black Stout from Bear Republic Brewing. Marko chose this beer not only for its extremely complex flavor but also with bias as its one of his favorites. The beer is brewed using five different malts as well as adjuncts and several different varieties of hops, all adding to the complexity of the distillate. This whiskey was distilled using a copper Alambic Charentais Pot still. It ran 24 hours a day for 9 straight days. 6,000 gallons of beer was distilled down to 590 gallons of whiskey yielding roughly 650 cases.
